Shrimp, Scallops + Brown Rice + Veggies
Hey guys! This isn’t really a recipe post but more of a dinner idea. It’s Thursday and Thursday means FOOD lol.
Y’all know I love seafood (I actually love ALL food) but this Shrimp, Scallops + Brown Rice + Veggies is one of my favorite quick & filling dinners. (I used fresh shrimp but I did use frozen scallops because they store was out of fresh ones)
Let me let y’all in on a LITTLE secret. There are TWO things I can NOT cook.
I can NOT BOIL EGGS. I always forget that they are boiling and burn them. EVERY. SINGLE. TIME. Even when I set a timer I STILL forget. Never fails.
I can’t cook brown rice. PERIOD. There is some sort of scientific or mathematical equational that sounds as difficult as the pythagorean theorem and is as complicated as Psychological Anthropology to cooking brown rice and I just can’t do it, so I used the microwave bag from Publix lol.
Back to the post lol. This was a quick and easy dinner. Perfect for those nights when you just need to throw food on the table to feed people and you don’t want to order pizza lol.
