Shrimp Fried Rice

Hey guys! Happy Thursday! Need a dinner idea? This Shrimp Fried Rice is Pretty good (and even better as leftovers).

What is it about leftovers that makes them SO much better? I personally believe that they are better because you don’t have to cook two days in a row lol. I LOVE cooking but I also love when I don’t cook lol.

SHRIMP FRIED RICE

I have been making Shrimp Fried Rice for SO long that I no longer need a recipe. I don’t even remember specific amounts, I just eyeball it lol but I’m going to try to remember how I put it together. It’s SUPER easy and basically fail proof.

SHRIMP FRIED RICE
I cook the rice (normally 3 cups) first. While it’s cooking I cook about half of the smoke sausage (normally an entire pack of conecuh sausage) then add about a whole onion, and  whole red, green and yellow bell peppers.

Once the sausage is done and the veggies are soft, the rice is done at this point so I add it to the rice. I add a few scrambled eggs and bacon pieces to it. I add the shrimp last. I use a couple pounds of raw fresh shrimp. NEVER use pre-cooked shrimp. It will be a rubbery mess. Ask me how I know lol.

I add the shrimp and let the heat from the rice cook it. It’s perfect every time. Add as much or as little soy sauce as you would like. I like to top mine with green onions only because I love them lol.

That is my recipe for the week lol. Simple and easy and possibly a new idea for you guys 🙂
